Banana Bread

This banana bread is soft, moist, and packed with flavor, with a naturally sweeter and more banana-forward profile thanks to the extra moisture Elevate can absorb. It is simple to make, comes together quickly, and bakes up beautifully. The only hard part is waiting for it to cool.

Ingredients

  • Melted butter - 85 g (6 tbsp)
  • Maple syrup - 120 g
  • Ripe bananas, mashed - 3 to 4 pcs
  • Eggs - 2 pcs
  • Baking soda - 5 g (1 tsp)
  • Salt - 3 g (1/2 tsp)
  • Cinnamon - 3 g (1/2 tsp)
  • Vanilla extract - 6 g (1 tsp)
  • Elevate Protein Flour - 245 g (2 cups)

Method

  1. Preheat oven and prepare pan
    Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Melt butter
    Melt the butter in the microwave or brown it on the stovetop for a richer, nutty flavor.
  3. Mash bananas
    In a large bowl, mash the bananas until mostly smooth with some texture remaining.
  4. Mix wet ingredients
    Add melted butter, maple syrup or honey, and eggs to the bananas. Mix until smooth and combined.
  5. Add vanilla and spices
    Stir in vanilla extract, baking soda, cinnamon, and salt until evenly incorporated.
  6. Add protein flour
    Gently fold in Elevate Protein Flour just until combined to keep the loaf tender.
  7. Optional mix-ins and rest
    Fold in chocolate chips, nuts, or berries if desired. Let the batter rest 5 minutes to absorb moisture.
  8. Bake with foil tent
    Pour batter into loaf pan and bake 30 minutes. Cover loosely with foil, then bake 15 more minutes until a toothpick is clean.
  9. Cool and slice
    Cool the loaf in the pan for 10 minutes before slicing and serving.
