Our Story
The Rise
There is an endless and growing list of ingredients, but flour is still the cornerstone of baking. My journey with flour began out out of necessity during the pandemic.
For me, cooking during COVID was an opportunity to explore healthier alternatives to traditional baked goods. I quickly realized most of the healthy and macro-friendly recipes tasted bad, and the ones that tasted good were too complicated. I wanted a simpler solution: a flour that was not only versatile and delicious but also packed with protein and low in calories and carbs.
The Inspiration
Traditional baking flour is made from wheat. To make it, you just grind up the wheat kernel into a fine powder. The problem is that wheat kernel is mostly composed of starch. Starch isn't necessarily bad for you, but it's a pure and simple carbohydrate.
Thankfully, protein and fiber are also found in the wheat kernel, but in smaller proportions. What if we took that same wheat kernel, ground it up, isolated the good stuff (ie protein, fiber), and took out the starch?
Thus, Baker Baking Company was born, and with it, our one and only product: Elevate Protein Flour.
The Journey
Creating Elevate was no small feat. It involved 4 years of research and experimentation.
During this process, my kitchen started to look like a scene from a cartel operation. With flour powder everywhere, it resembled something far less innocent than baking ingredients. It was a mess, but it was worth it.
The key ingredient, wheat protein isolate, was carefully sourced and sampled from different farms and suppliers across the country. Finally, I found one that was clean label and didn't taste like whey protein powder. This wheat protein was then combined with resistant wheat starch, a dietary fiber isolated from the wheat kernel that acts as a prebiotic and supports gut health.
I tried using a list of other ingredients, but I really wanted to keep the formula as clean and simple as possible. I didn't want to use any sweeteners, gums, or preservatives, and I wanted something that was dairy-free, nut free, vegan, and keto.
The Result
The result is a 1:1 flour replacement with a macro profile that is truly exceptional. With just 60 calories per serving and 13 grams of protein, Elevate Protein Flour offers an unprecedented nutritional profile for any food, let alone flour. This makes it a great choice for anyone looking to maintain a healthy diet without sacrificing the joy of baking.
