Carrot Cake Loaf + Cream Cheese Frosting

Ingredients

Cake Ingredients

  • 200g Elevate Protein Flour
  • 155g brown sugar
  • 100g olive oil
  • 50g maple syrup
  • 50g melted butter
  • 50g Greek yogurt
  • 2 eggs
  • 5g cinnamon
  • 3g nutmeg
  • 3g ground ginger powder
  • 3g baking powder
  • 1g baking soda
  • 250g carrots (roughly three large carrots) *Could add raisins, walnuts, crushed pineapple*

Cream Cheese Frosting Ingredients

  • 226g softened cream cheese (one package)
  • 150g Greek yogurt
  • 80g maple syrup
  • *option, ½ tsp of lemon juice, ¼ tsp salt, 1 tsp vanilla extract*

Method

  1. Preheat oven to 350°F (175°C) and prepare your pan (8x8 pan or similar)
  2. Prep ingredients:(a) Melt the butter and let it cool slightly (b) Finely grate the carrots
  3. In a large bowl, combine wet ingredients in a bowl and whisk until smooth. Brown sugar, olive oil, melted butter, maple syrup, Greek yogurt, eggs
  4. In the same bowl, add the dry ingredients—flour, baking soda, baking powder, cinnamon, nutmeg, and ginger—and gently fold until just combined, being careful not to overmix.
  5. Fold in carrots (and optional add-ins)
  6. Transfer to the prepared pan and bake for ~45 minutes or until the toothpick comes out with small moist crumbs. Slightly underbaking is okay for a more moist interior
  7. Cool before slicing for the best texture

Cream Cheese Frosting

  1. Soften cream cheese by letting it rest at room temperature, or microwaving it for 10-15 seconds
  2. Combine cream cheese, maple syrup, and greek yogurt in a mixer and mix until well combined and the frosting is smooth
  3. Layer frosting on cake and enjoy (optional sprinkle some cinnamon on top)
