Easy High-Protein Greek Yogurt Cinnamon Rolls

These cinnamon rolls are the quick-and-easy option: no yeast and no waiting for dough to rise. FAGE 0%
keeps the calories especially low, but 2% or 5% Greek yogurt can give the rolls a richer flavor and softer
texture if you do not mind a few extra calories.

Ingredients

Dough and Filling

  • 180 g Elevate Protein Flour
  • 180 g FAGE 0% plain Greek yogurt
  • 8 g (2 tsp) baking powder
  • Pinch of salt
  • Small splash of water, only if needed

Filling

  • 28 g (2 tbsp) butter, softened or melted
  • 50 g Truvia Sweet Complete Brown sweetener
  • 1 tbsp ground cinnamon

Greek Yogurt Cream Cheese Icing

  • 113 g (1/2 cup) FAGE 0% plain Greek yogurt
  • 22 g (2 tbsp) Good & Gather whipped cream cheese
  • 1 tbsp Jell-O Zero Sugar Vanilla pudding mix
  • 1 tbsp erythritol/monk fruit sweetener
  • Splash of vanilla extract
  • Pinch of salt

Optional: Jell-O Zero Sugar Cheesecake pudding mix works great in place of the vanilla.

Method

  1. Preheat the oven to 350°F and lightly grease a baking dish.
  2. Mix the Elevate Protein Flour, baking powder, and salt in a bowl.
  3. Add the Greek yogurt and stir until the mixture begins forming a dough.
  4. Let the dough rest for 5–10 minutes before deciding whether it needs more liquid. If dry areas remain,
    add a very small splash of water and mix again.
  5. Transfer the dough to a lightly dusted surface and gently bring it together. Roll into a rectangle about 1/4
    inch thick.
  6. Spread the butter evenly over the dough.
  7. Mix the brown sweetener and cinnamon together, then sprinkle evenly over the butter.
  8. Starting from the long side, roll the dough into a log.
  9. Cut into 8 equal cinnamon rolls and arrange them in the prepared baking dish.
  10. Bake at 350°F for 35–45 minutes, or until the rolls are cooked through and lightly golden.
  11. While the rolls bake, mix the Greek yogurt, whipped cream cheese, pudding mix, sweetener, vanilla, and
    salt until smooth.
  12. Let the cinnamon rolls cool slightly before spreading the icing over the top.
