Ingredients

Pancakes

  • 150g Elevate protein flour
  • 30g sugar or sweetener 
  • 9g baking powder
  • ¼ teaspoon baking soda
  • 2g salt 
  • 220g milk or milk substitute (we used oat milk)
  • 30g butter
  • 10g vanilla extract
  • 1 egg

Method

  1. In a large mixing bowl, combine the flour, sugar (or sweetener), baking powder, baking soda, and salt.
  2. Create a well in the center of the dry ingredients and add the milk, melted butter (slightly cooled), vanilla extract, and egg.
  3. Using a wire whisk, whisk the wet ingredients together in the center first, then gradually incorporate the dry ingredients until a smooth batter forms. A few small lumps are perfectly fine.
  4. The batter should be thick yet pourable. If it seems too thick and doesn’t flow easily from a ladle or measuring cup, stir in extra milk 1–2 tablespoons at a time until the desired consistency is reached.
  5. Let the batter rest while you preheat a nonstick skillet or griddle over medium-low heat. Lightly grease the surface with a small amount of butter.
  6. Pour about ¼ cup of batter onto the heated pan. Gently spread it into a round shape using the back of a ladle or measuring cup if needed.
  7. Cook until the bottom is golden brown and bubbles begin to form on the surface. Flip with a spatula and cook the other side until golden and cooked through.
  8. Continue with the remaining batter, adding more butter to the pan as needed.
  9. Serve warm with your favorite toppings such as maple syrup, fresh fruit, ice cream, or simply enjoy them on their own.
