This is the recipe that made me say, “Yep, Elevate works.”
This bread convinced me Elevate wasn’t just an idea — it actually bakes like real bread.
And look, you can do fun things with almond, coconut, oat flours, even protein powder.
But for actual bread?
You need real flour, and Elevate finally gives you that high-protein option without preservatives.
This loaf uses about 75% hydration, which is a little higher than a traditional bread recipe. With Elevate, that extra water helps the dough come together, but it also means the loaf might sink slightly after baking which is totally normal. If you prefer something a bit sturdier, 70–75% hydration is the sweet spot, so feel free to experiment.
We shaped ours as a simple sandwich loaf because it’s easy, reliable, and makes great toast. But you can absolutely shape it however you like, depending on what you’re making.

Baker's Wonder Bread Recipe
Ingredients
- 3 cups Elevate Protein Flour (360 g)
- 1 cup + 2 tbsp warm water (≈ 270 g)
- 1 tsp yeast
- 2 tsp sugar
- 1½ tsp salt
- ½ tsp olive oil
Instructions (see video below)
1. Whisk the dry ingredients together in a mixing bowl.
2. Slowly add warm water and bring the dough together with your hands.
3. Knead in a stand mixer for 10+ minutes until smooth and cohesive.
4. Shape the dough however you like and lightly grease the surface with olive oil.
5. Cover loosely with plastic wrap and let rise at room temperature 1–2 hours, or until doubled.
6. Bake at 375°F for 45 minutes, or until golden brown.
7. Let the loaf cool completely before slicing.
