These soft, buttery rolls are the perfect addition to any meal. Made with Elevate Protein Flour, they’re packed with protein and lower in carbs while keeping the classic taste and texture intact.
Ingredients
For the Dough
- 1 cup (240g) 2% milk or milk alternative (room temperature or warm)
- 40g (about 3 Tbsp) granulated sugar
- 1/4 cup (55g) vegetable oil
- 8g instant yeast
- 1 large egg (room temperature)
- 1 tsp salt
- 360g (3 cups) Elevate Protein Flour
- 1 tsp vegetable oil (for greasing)
For the Egg Wash:
- 1 egg
- 15g (1 Tbsp) 2% milk or milk alternative
Instructions
-
Prepare the Yeast Mixture:
In a large mixing bowl, whisk together the milk, sugar, yeast, and oil. Let it bloom for about 5 minutes, until the mixture is slightly frothy. -
Add Egg and Combine:
Add the egg to the yeast mixture and whisk until fully incorporated. -
Mix the Dough:
Add the Elevate Protein Flour and salt to the bowl. Mix until a sticky dough forms. -
Rest Before Kneading:
Let the dough sit, uncovered, for 15 minutes. This helps the dough hydrate and become easier to work with. -
Knead the Dough:
Knead the dough for 10–15 minutes, either by hand or in a stand mixer fitted with a dough hook, until smooth and elastic. Perform the "windowpane test" to ensure proper gluten development. -
First Rise:
Place the dough in a greased bowl using 1 tsp of vegetable oil, cover with plastic wrap, and let it rise in a warm place for 1–2 hours, or until doubled in size. -
Shape the Rolls:
Punch the dough down to release any air bubbles. Divide it into 12 equal pieces. Roll each piece into a smooth ball and place them on a parchment-lined baking sheet, spaced about 1 inch apart. -
Second Rise:
Cover the rolls with a clean kitchen towel and let them proof for 45 minutes to 1 hour, or until they have doubled in size. -
Prepare the Egg Wash:
In a small bowl, whisk together the egg and milk. Gently brush the tops of the rolls with the egg wash for a golden, shiny finish. -
Bake the Rolls:
Preheat your oven to 350°F (175°C). Bake the rolls for 20–25 minutes, or until golden brown and cooked through. -
Cool and Serve:
Transfer the rolls to a wire rack and let them cool slightly. Serve warm with butter, or use them to make sliders, sandwiches, or as a side to your favorite meal.
