High-protein, low carb chocolate chip cookies

I usually avoid baking with sugar substitutes… but regular sugar would’ve pushed the carbs way too high. So this version keeps the net carbs low while still delivering that classic chocolate chip cookie texture.

And yes, they actually taste like cookies.

Ingredients

  • 36g Elevate Protein Flour (¼ cup)
  • ½ tsp baking soda
  • Pinch of salt (⅛–¼ tsp)
  • 45g brown sugar substitute (¼ cup)
  • 30g butter, melted (2 tbsp)
  • 3g vanilla extract (1 tsp)
  • 25g unsweetened applesauce (2 tbsp)
  • 36g vanilla or unflavored protein powder (⅓ cup)
  • 20g sugar-free chocolate chips (2 tbsp)

Instructions

1. Preheat oven to 350°F (175°C) and line a baking tray with parchment paper.

2. In a bowl, whisk together:

    • Elevate flour
    • Baking soda
    • Salt

(Do NOT add protein powder yet.)

3. In a separate bowl, melt the butter and stir in the brown sugar substitute until smooth.

4. Add vanilla extract and applesauce to the butter mixture and mix well.

5. Pour the wet mixture into the dry ingredients and stir until just combined.

6. Now add the protein powder and mix gently until incorporated.
⚠️ Do not overmix.

7. Fold in chocolate chips.

8. For denser cookies, chill dough 30+ minutes. For softer cookies, bake immediately.

9. Roll into balls, flatten slightly, and bake for about 7 minutes, until edges are set but centers are still soft.

10. Let cool completely on the pan. They will continue setting as they cool.

Important Tips (These Matter)

• Adding protein powder last is critical. If added too early, the texture suffers and the cookies won’t rise properly.
• Butter gives the best texture. Other fats won’t replicate classic cookie structure as well.
• Unflavored protein powder gives a more neutral taste. Vanilla protein can come through slightly.
• Pull them out before they look fully done. If they look finished in the oven, they’ll be dry after cooling.
