Ingredients:

  • 1 cup Elevate Protein Flour
  • 1 cup fine cornmeal
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon monk fruit sweetener (optional for a touch of sweetness)
  • 1 1/4 cups unsweetened oat milk (or water for a lighter version)
  • 2 tablespoons olive oil (or melted butter)

Instructions:

  1. Mix Dry Ingredients:
In a large bowl, whisk together the Elevate Protein Flour, cornmeal, baking powder, salt, and monk fruit sweetener.

Slowly add oat milk and olive oil to the dry mixture. Stir until just combined to form a thick batter.

  3. Cook the Johnnycakes:

  4. Flip and Finish:
Cook for 2-3 minutes on one side until bubbles form and the edges set. Flip and cook for another 2-3 minutes or until golden brown.

  5. Serve Warm:
Enjoy as is, or top with butter, maple syrup, or your favorite savory additions like avocado or eggs.
