I tried to make biscuits they didn’t turn out at all. Then I made my protein pancakes using the Elevate flour and they turned out Great. I wished I could find recipes using this flour.
I love this flour as it has brought baking back into our diet. We are on the keto diet, but the nut flours were causing digestive issues.So I had almost completely quit baking, and we missed that. This flour has brought flour back into our lives that we can use and eat the products and not break our keto diet. Nor get digestive problems. It was so good to have yeast bread again.
The flour itself is just amazing and we love it but as with many other reviews, I have read I have the same complaint the price. I understand it is a new product and you need to make your money back as you have probably invested quite a bit developing it but ouch. the price is just almost overwhelming. Hopefully in the future, you can lower that to make it more affordable to more people as it is a great flour. The price is why I only give it four stars otherwise it is a five star flower for sure.
The flour has great macros that help you bake as a healthier outcome. I have tracked with my CGM with minimal spikes. Great to have baked goods with less impact to my body.

Where to start.....wanting to love this I was anxious to try various recipes. From yeasted doughs to quick breads and pe crusts etc, I tried them all. With a brand new container of yeast I first tried the recipe on the back of the package as a control (assuming it was a tested recipe since it was their own). Upon opening the bag I noticed a strong odor of clay. Not horribly off putting but too noticeable to ignore. The bread did not turn out good. It was okay but did not rise much and the texture was dry and crumbly and the clay odor was still slightly present. I then tried a pie crust and that was significantly better. Flaky. Buttery. Very good. Scones were next. Also good. Then I made baking powder biscuits. These were fine. A little dry but edible and with tweaks I'm sure I could improve them. Then the dinner rolls.....oh boy....no. Using an enriched dough recipe was a big fail. The addition of eggs and butter generally make it more difficult anyway for dough to rise with traditional wheat flour but the Elevate Flour did not rise at all and the rolls were rock hard, dry and tasted like clay. Fail on an epic level. So not wanting to toss out the rest I tried cookies. Cue the melodic "Aha". Delicious. Using Sunbutter I made "peanut butter" cookies with white chocolate chips. Oh my. That's what I will use the remainder of the flour....cookies.
To wrap this up....sadly I will not buy again and here's why...too expensive for what I would use it for. I wanted this to be mainly for bread not desserts. We don't eat desserts very often and the combination of coconut flour and whey protein powder is a fine substitute and cheaper with same results. I could not get past the clay odor and subtle aftertaste also. I am not willing to experiment with recipes to get the ratios right at $10+ per pound. I never expected it to taste like wheat...I am not unrealistic...but based on the reviews I did expect better results. Not the home run I was hoping for.
